We
like to cook and play at our house. Hubby is a chef so it is an all in family
event when it comes to recreating a food that we love. We went through a trial
run … 1st version tooo saucy and the dough not quite right. After today's test we are confident that this is a super yummy representation of the Costco Chicken Bake. Enjoy! I know we did.

Style Chicken Bake
Makes
10 chicken bakes
5
lb Pizza dough (I like
the recipe from California Pizza Kitchen’s cookbook)
30
oz Grilled chicken breast,
cut into ½ inch cubes
10
oz Bacon, cooked and
chopped finely
20
oz Mozzarella and/or Provolone,
shredded
3
oz Parmesan cheese,
shredded
5
each Green onions, sliced
¾
cup Caesar dressing
Topping
1
cup Caesar dressing
3
oz Parmesan cheese,
shredded
Roll
out 8oz portions of pizza dough into rectangles 6in by 12in
Mix
chicken, bacon, cheeses, green onion, and Caesar dressing
Taste
filling and adjust seasoning of filling with salt
Place
6oz of filling on each piece of dough, spreading out length-ways
Fold
the edges together over the filling, sealing well and sealing the ends
Place
the seam side down on a baking sheet
Brush
with the Caesar dressing and sprinkle the Parmesan cheese over the top
Bake
at 350°F for 30 minutes, or until the dough is cooked through and the topping
is golden brown
